The difference between a 2s1p and 2s2p pack is that the 1p pack has two cels of a certain capacity, and the 2p pack has four cels half that capacity. A 2P pack is essential made of two 2s batteries connected in parallel. This is done to achieve higher C-ratings (higher amps) at lower stress to the cels.
For example; you have a 2S1P 3000 mAh battery, and a 2S2P 3000 battery. The first one has two cels which deliver the current. The second one has four cels, 2x2 in parallel. The current here is divided over the two 'batteries' so each cell only has to deliver half the current. This increases battery life and max current delivery, in a 2P configuration you can pull a lot more amps from a battery with te same capacity.
For our use a 30-40 C rating will suffice, a 2P configuration is not realy neccesairy.
